Ruggeri Organic Dry Spelt Sourdough is a semi-finished product for bakery products with dried spelt sourdough and dry brewer's yeast.
- Dried Type “0” wheat flour*
- Dry spelt sourdough* 8,5%
- Dry brewer’s yeast 4,9%
- Wheat vital gluten*
It may contain milk, eggs, soy, sesame seeds, lupins.

Organic Dry Spelt Sourdough comes from the selection of the best organic sourdoughs. Thanks to the spelt sourdough, it develops unique aromas, capable of enhancing the flavour and fragrance of the finished product. This particular organic dried sourdough gives an excellent fragrance to the finished product and a fine and regular alveolation to the freshly baked bread.
How to use our Dried Spelt Sourdoug
This organic dried sourdough is easy to use: just replace the normal fresh or instant brewer's yeast with this incredible product.
The dosage to use is: 20% of Organic Dried Spelt Sourdough with yeast on the weight of the flour.
Then let your dough rise for 2 hours at room temperature.
An example: just add 100 g of the preparation to 500 g of flour and follow the instructions of your favorite recipe for bread, pizza, focaccia, breadsticks or crackers.
