Green Peas Flour: a flour with a high protein content
Ruggeri Green Peas Flour is perfect for the preparation of a wide variety of homemade bread recipes, by mixing it with wheat flour. We recommend dosing it up to 25% for making special breads. Here is one of our recipes for making tasty loaves of bread with pea flour.
Recipe for bread with Green Peas Flour
Ingredients: 900 g Ruggeri Type 1 Wheat Flour - 100 g Ruggeri Green Peas Flour - 100 g Ruggeri Dried Sourdough - 20 g Fine Salt - 30 ml Seed Oil - 600 ml Water
Procedure: pour the water into a bowl, add the Dried Sourdough and all the flour and begin to knead for about 5 minutes on a working surface. Add the seed oil and finally the salt, continuing to knead until the dough is smooth and homogeneous. Place the dough back in the bowl, covered with a cloth, for about 20 minutes. Form the loaves and let them rest for 45 minutes at a temperature of about 27°C. Heat the oven to 220°C and bake for about 20 minutes.
It may contain milk, egg, soy, sesame seeds, lupins and cereals containing gluten.
