Ingredients:
- 130 g of almond flour
- 130 g of Ruggeri spelt flour
- 140 g of Ruggeri buckwheat flour
- 60g of chocolate chips
- 3 bananas (1 for decorating)
- 40g coconut flour
- 3 eggs
- 100 ml almond milk
- half a sachet of yeast
Procedure:
Turn the oven on to 180°.
Mash two bananas until they become mush. Then pour them into the mixer with the eggs and milk and turn it on, mixing. Slowly add the flours and yeast, finally the chocolate chips, mix until you get a smooth dough, then pour it into a plumcake mold lined with baking paper and level it. Take the banana, cut it in half lengthwise and arrange the two halves on top of the dough.
Bake at 180° for 50 min. Check the cooking with a toothpick and remove from the oven.
