Ingredients approx. 2 servings:
- 250 gr. of Ruggeri Bread Mix to taste **,
- A spoonful of extra virgin olive oil
Low and crispy pizza base: (for Pugliese or Sicilian pizza)
- Apulian Bread Mix
Soft and high pizza base: (for Neapolitan style pizza)
- Common Bread Mix
- Soft Milk Bread Mix
Tasty and original pizza base:
- 7 Grain Bread Mix
- Toasted Seed Bread Mix
Pizza base recipe:
Pour 125 ml. of warm water into a bowl, (150 ml. of water for the Pugliese Bread mix), then add 250 g. of Ruggeri Bread Mix to your taste.
Add a spoonful of extra virgin olive oil and start kneading vigorously for at least 10 minutes, possibly adding a sprinkling of soft wheat flour type "00" if the dough sticks.
Take a baking tray, which is usually supplied with the oven, and place a sheet of baking paper the length of the tray on top.
Form a ball with the prepared dough, place it in the center of the pan on top of the baking paper and leave the dough to rest under a thin plastic sheet for 90'/120' minutes away from drafts (you can, for example, place the pan inside the oven turned off).
At the end of the leavening you will have a ball of dough that will be more than double its initial size.
Remove the pan from the turned-off oven and remove the plastic wrap from the dough.
Place the sheet of baking paper alone with the risen ball on top on a table or smooth surface.
Roll out the ball of dough with a rolling pin along the entire size of the sheet of baking paper.
Garnish with tomato, mozzarella and other ingredients to taste and drizzle with raw extra virgin olive oil.
Place the sheet of baking paper with the decorated pizza base on the baking tray.
Turn on the oven and bring it to a temperature of 180°-190° C.
When the oven is at temperature, insert the pan and cook for 18-20 minutes.
Suggestion :
For the tomato we recommend using canned cherry tomatoes, blend them in a blender and use the resulting sauce as a garnish for the pizza. For the mozzarella we recommend finely chopping the mozzarella with a food processor and sprinkling chopped mozzarella over the tomato.
