Crumbly Lemon Biscuits | Stone Ground Soft Wheat Flour

Ingredients:
  • 280 g of Ruggeri stone-ground soft wheat flour
  • an egg
  • juice and zest of an organic lemon
  • 100 g of butter
  • 100 g of sugar
  • half a sachet of baking powder
  • sugar for the final breading
To prepare the crumbly lemon biscuits, start like this... in a large bowl, put the butter together with the sugar and crush with a spoon for a while until everything is mixed together... add the egg and the lemon juice and zest, incorporating this well too... add the flour and the yeast, mixing everything together... now let the mixture rest in the refrigerator for about 40 minutes, if it remains longer it is not a problem... after this period of time, form balls as large as a walnut... pass them in the sugar and distribute the balls on a baking tray covered with baking paper... bake at 180° for about 15 minutes... your crumbly lemon biscuits are ready!!
