Ingredients (for 2 old face pizzas):
- 250 g of 00 flour
- 25 gr of Dried Sourdough with Ruggeri Yeast
- half a teaspoon of Ruggeri active toasted malt (or honey)
- 80 ml of milk
- 80 ml of water
- 5 g of salt
- 1 tablespoon extra virgin olive oil
Ingredients for the filling:
- 1 golden or Tropea onion
- tomato puree
- salt
- oil
- fresh chili pepper (you can also omit it)
- oregano
- smoked scamorza
- breadcrumbs (or the crumb of stale bread)
Old Face Pizza
The old woman's face is a mix between sfincione and pizza, the shape should be a little more elongated (like a face) but since I cooked it in the Pizza Express I made it round, during cooking between the tomato and the pasta on the surface some cracks could form which could be compared to the wrinkles on the face.
First knead the pizza. In a bowl mix all the ingredients, then turn them out onto the pastry board and knead them well with the help of your hands, divide the dough into two balls, sprinkle them with flour, cover them with cling film then with a cloth and leave to rise for 3 hours. After the time has elapsed, take the balls, work them again and leave them to rise for another hour.
Meanwhile, in a bowl, mix the tomato puree with the breadcrumbs (you should obtain an orange mixture), add the onion cut into thin slices, the chilli pepper and a little grated or diced scamorza, mix well and put in the fridge.
Turn on the pizza express on 3 to heat it up well for about ten minutes, in the meantime roll out the first pizza with your hands (don't use a rolling pin please) to make it a little plumper than usual (so taller and softer) I rolled it out just a little smaller than the two wooden peels to put it in the oven, spread the tomato mixture over the whole pizza, salt, sprinkle with a drizzle of oil, oregano and finally more scamorza, bake until the edges are nicely colored.
It's very good, very tasty.
