Truffle Bundles | Arifa Organic Flour

Ingredients

Crepes Ingredients:

  • Eggs 3
  • Milk 200 ml
  • Flour Arifa Bio Ruggeri Flours 150 g

Cream ingredients:

  • Medium-Small Potatoes 6
  • Parmesan cheese to taste
  • Truffle Cream 2 tablespoons
  • Milk to taste

Preparation

Cream:

The procedure is very simple, let's start with the cream:

  1. Place the already peeled and washed potatoes, cut in half, in a saucepan with the water and boil them until they are cooked
  2. after which mash them with a fork and slowly add the milk, mixing to create a cream
  3. then add the parmesan and salt and finally add the truffle cream

Crepes:

  1. For the crepes, beat the eggs in a bowl, add the milk and the flour, continuing to mix until you get a fairly smooth and thick mixture. Take a flat crepe pan, add a little butter or olive oil and pour the mixture in with a ladle. Let it spread out and cook on both sides.
  2. When all your crepes are ready, just assemble everything by placing a spoonful of cold cream in the center of the crepe, close it like a bundle and finally, when they are all ready, pour a little parmesan on top and bake for 5-6 minutes.
