Recipe from " Mimma's Pastries and Pastries "
Ingredients for 4 people:- 1 pack of Ruggeri pumpkin gnocchi mix
- water as per instructions
- 300 gr. of shelled shrimp (even frozen)
- 2 tablespoons chopped fresh parsley
- 1 clove of garlic
- 1\2 chili pepper (optional)
- 1 tablespoon chopped fresh mint
- a few basil leaves
- knead the gnocchi mix with the water
- With the resulting mixture, form small cylinders, cut them into 2 cm pieces and flatten them slightly with the prongs of a fork.
- in the meantime prepare a mixture with olive oil, finely chopped garlic, parsley, mint and chilli pepper
- fry on very low heat for 2 minutes and add the shelled shrimps
- season with salt and cook over high heat, stirring, for 5 minutes
- put out the fire
- in the meantime, boil the gnocchi in plenty of salted water with 1 tablespoon of oil, to prevent them from sticking together
- When they float, collect them with a slotted spoon and add them to the shrimp sauce.
- sauté for 1 minute, add more fresh parsley and serve
