Pumpkin Gnocchi with Shrimps "Sautéed" with Aromatic Herbs

Recipe from " Mimma's Pastries and Pastries "
1-1 Ingredients for 4 people:
  • 1 pack of Ruggeri pumpkin gnocchi mix
  • water as per instructions
  • 300 gr. of shelled shrimp (even frozen)
  • 2 tablespoons chopped fresh parsley
  • 1 clove of garlic
  • 1\2 chili pepper (optional)
  • 1 tablespoon chopped fresh mint
  • a few basil leaves
Procedure:
  • knead the gnocchi mix with the water
  • With the resulting mixture, form small cylinders, cut them into 2 cm pieces and flatten them slightly with the prongs of a fork.
  • in the meantime prepare a mixture with olive oil, finely chopped garlic, parsley, mint and chilli pepper
  • fry on very low heat for 2 minutes and add the shelled shrimps
  • season with salt and cook over high heat, stirring, for 5 minutes
  • put out the fire
  • in the meantime, boil the gnocchi in plenty of salted water with 1 tablespoon of oil, to prevent them from sticking together
  • When they float, collect them with a slotted spoon and add them to the shrimp sauce.
  • sauté for 1 minute, add more fresh parsley and serve
