Homemade Gnocchi: Here's a Delicious Recipe with Ruggeri Spelt Flour

Tasty and nutritious, homemade gnocchi are a first course that is always appreciated. Ideal both alone and accompanied by sauces or condiments, they are always a good idea.

Delicious Gnocchi: Try This Recipe with Ruggeri Spelt Flour

Ingredients :

  • 250 g Ruggeri Spelt Flour
  • 350 ml of water
  • 1 level tablespoon of salt
  • 1 tablespoon grated parmesan cheese
  • 90 g butter
  • 60 g acacia honey @dallastessaparte.coop
  • 40 g chopped hazelnuts
  • 1 sprig of rosemary

Initial preparation

Bring the water to a boil with a level tablespoon of salt. Turn off the heat and pour in the flour along with a tablespoon of grated parmesan.
Using a spoon, mix vigorously until a mixture forms. Pour the entire contents of the pot onto the table.
Using your hands, work the mixture until it is uniform.

Temporarily store the freshly made gnocchi on a lightly floured tray.

Preparation of honey sauce

Transfer the butter and honey to a saucepan and, over low heat, let them melt slowly and completely.
Meanwhile, wash and dry the sprig of rosemary, remove only the needles and chop finely with a knife.
Add to the mixture in the saucepan, so as to release all the aroma of the rosemary.
When the mixture is completely melted, add some of the chopped hazelnuts and mix well.


Final procedure

Once all the gnocchi are ready, pour them into a pan with boiling, well-salted water.
As soon as they float to the surface they are ready (about 4 minutes).

Drain the gnocchi, season them with the hot honey sauce and mix gently.
Complete the chopped hazelnuts kept aside.
Serve hot.
