Ingredients for about 12 pizzas:
- 250 g of instant flour for pizza, I used the Ruggeri one
- 10 g of extra virgin olive oil + qb
- 120 g of water
- Tomato sauce already cooked to taste
- Grana and Fontina cheese in cubes to taste
- Sunflower oil for frying
Procedure:
Place the water and olive oil in the jug, mix for 1 min. at 37°C, speed 2, add the
instant pizza flour and mix for 2 min. at Spiga speed.
With oiled hands, take a ball of dough, flatten it between the palms of your hands and form a round pizza, prick the surface with the prongs of a fork and fry it in a pan with hot oil.
As they brown on both sides, place the montanare on a tray with absorbent paper and season them immediately with the tomato sauce and cheese.
Bring to the table and serve immediately.
