Ricotta and chocolate chip muffins | Arifa Organic Flour

RECIPE FOR 12 RICOTTA MUFFINS Ingredients:
  • 120g fresh ricotta
  • 120g granulated sugar
  • 2 whole eggs at room temperature
  • 1 teaspoon vanilla extract (or vanillin)
  • 70ml of seed oil
  • 210g of ORGANIC ARIFA FLOUR
  • 5g baking powder
  • 3g of bicarbonate
  • pinch of salt
  • 120g chocolate chips (or chocolate pieces)
Procedure: In a bowl, mix the ricotta with the sugar and vanilla extract. Add the whole eggs and the seed oil. Mix everything until you get a smooth mixture without lumps. At this point, incorporate the flour that you have previously sifted and mixed with the yeast, baking soda and salt. Incorporate everything and finally add the chocolate chips. Once the ricotta muffin mixture is ready, distribute it into 12 muffin cups filling them for about 2/3 and bake at 180 ° for about 20-25 minutes (test with a toothpick). Once baked and left to cool, your delicious and soft ricotta and chocolate chip muffins will be ready to be enjoyed. ENJOY YOUR MEAL!!! ?
