Recipe from " La Spianatoia "
Ingredients
- 380 g of Arifa organic flour
- 100 g of Ruggeri stone-ground soft wheat flour
- 50 g of sugar
- 120g soy milk
- 5/6 gr of brewer's yeast
- 2 eggs
- 50 g of butter
- a pinch of salt




Preparation
Place all the ingredients, including the yeast dissolved in the milk, into the Thermomix or planetary mixer jug.
set the speed to 4 minutes.
Transfer the dough onto a floured surface, work it a little more and shape it into a ball.
let the dough rest for about 1 hour, then gently break the rising process and shape the dough into a cylindrical shape.
transfer into the plumcake mould, place in the oven turned off and leave to rise for another 4 hours (it should double in volume)
cook in a static oven preheated to 180° for approximately 30 minutes.
let it rest for a few minutes, remove from the mold and leave to cool completely on the rack
