A recipe for quick homemade Panettone exists: all you need is a planetary mixer and the right ingredients, including of course our ever-present dried Pasta Madre! Pre-dough ingredients:
- 125 g Manitoba flour
- 30 g of dried Ruggeri sourdough
- 75 g of water
Aromatic mix ingredients:
- 20 g of honey
- 1 teaspoon rum
- Zest of 1 orange
- Zest of ½ lemon
- 1 vanilla bean
Ingredients according to dough:
- 250 g of Manitoba flour
- 90 g of water
- 85 g sugar
- 4 egg yolks
- 95 g butter
- Orange peel, cubed and candied to taste
- Dark chocolate chips to taste
Quick Panettone Recipe with Dried Sourdough
Mix the pre-dough ingredients, form a ball and make a cross cut on the top. Leave to rise, covered with cling film, for 1 hour. In the meantime, prepare the aromatic mix: combine honey, a spoonful of rum, orange zest, lemon zest and the vanilla pod and put in the fridge.
After the hour of rest, add 250 g of Manitoba flour and 90 g of water to the pre-dough. Start the mixer and add 85 g of sugar a little at a time. When all the sugar has been absorbed, add 4 egg yolks one at a time. When the dough is stringy, add 95 g of soft butter (at room temperature) a little at a time. Finally, add the aromatic mix and 5 g of salt dissolved in 10 g of water. Last turn of the mixer: add the candied fruit, the diced orange peel and the dark chocolate chips. Leave the dough to rest for 30 minutes covered with cling film.
Then, divide the dough in two, round the doughs and place them in 2 500 g molds. Leave to rise until almost the edge, covered with cling film in a warm place. Remove the cling film, turn the oven on to 175° C, make a cross cut on the dome of the panettone and place a knob of butter in the center. Bake in the lower part of the oven for 40-45 min. Take the panettone out of the oven, stick it at the base with 2 knitting needles and leave to cool upside down.
