Light and protein pizza | Salus Functional Pizza

Ingredients:

For the dough

  • 1 bag of salus functional pizza mix
  • 330 ml of warm water

For the filling

  • 100 g of light mozzarella
  • 100 g of peeled tomatoes
  • 2 medium potatoes
  • basil
  • rosemary
  • salt
  • pepper
  • extra virgin olive oil

Procedure:

  1. Pour all the preparation into a bowl, including the yeast contained in the magic pocket.
  2. Add the water little by little, stirring with a wooden spoon.
  3. Once the water has finished, knead well with your hands, using a lightly floured work surface.
  4. As soon as the dough is smooth, place it in a bowl and cover with cling film.
  5. Let it rise until doubled.
  6. Deflate the dough.
  7. Divide it in half and spread it out on lightly oiled baking trays.
  8. Let it rest for 30 minutes.
  9. Meanwhile, prepare the fillings.
  10. Cut the potatoes into thin slices using a mandolin.
  11. Season them with oil, salt, pepper and rosemary.
  12. Arrange them on the pizza and bake.
  13. Pass the tomatoes through a food mill and season with oil, salt and pepper.
  14. Spread the tomato on the pizza, fill with mozzarella.
  15. Add the basil, a drizzle of oil and bake.
  16. Leave to cook for 20 minutes at 230°C.
  17. Remove from oven and serve immediately.
