Yogurt Cake with Rice Flour

Here is an easy and delicious recipe for a cake to enjoy at any time of the day!

Recipe for a 22 cm diameter mould

Ingredients:

  • 4 eggs
  • 6 tablespoons of sugar
  • 4 tablespoons of type 1 flour
  • 4 tablespoons of Ruggeri rice flour
  • 1 pot of banana yogurt
  • 150 ml of whipping cream
  • 1 sachet of baking powder

Procedure:

In a bowl, beat the eggs with the sugar for at least two minutes. Sift the flours and add them in two additions, always mixing at low speed.
When everything is well incorporated, add the cream little by little, dissolve the yeast in the yogurt and add these too.
Mix until the mixture is smooth.
Pour into a baking tray lined with baking paper and bake in a preheated oven at 180°C for approximately 45 minutes.

Always do the toothpick test before taking it out of the oven.
Let it cool on a rack and sprinkle with icing sugar😋


Advice:

Banana yogurt can be substituted with another flavor of yogurt
Cream is the magic ingredient: it makes the cake delicious!
The fresh or vegetable one, always whipped, is fine.
It is better to use eggs at room temperature: they whip up faster
Always sift flour and yeast to avoid annoying lumps.
Rice flour lightens the dough and gives it an extra boost.
