Madeira cake with mascarpone and limoncello | Arifa Farina Bio

limoncello-cake-3617 The Cake with mascarpone cream and limoncello is a recipe that I made with a Madeira Cake base (a traditional British sponge cake) and a filling of mascarpone and limoncello custard. The result was great. A very delicate and delicious cream. Try it and you won't regret it. You can easily prepare the base the day before. The pan I used is 24 cm. The Madeira Cake base, unlike the classic sponge cake, is more compact but still soft. The syrup was made with diluted limoncello. Ingredients: Cake base
  • 350 g of Ruggeri Organic Arifa flour
  • 250 g of softened butter
  • 250 g of sugar
  • 4 eggs
  • half a squeezed Sorrento PGI lemon
  • half a sachet of baking powder
Cream for filling
  • 2 egg yolks
  • 250 ml of milk
  • 30 g of Ruggeri flour
  • 50 g of sugar
  • 100g of mascarpone
  • half a cup of limoncello
  • Cake soak
  • a cup of limoncello
  • a cup of water
For the final decoration
  • 100g of mascarpone
  • 2 lemons
To make the cake with mascarpone cream and limoncello, start by preparing the base of the cake. Put the flour and yeast in a bowl. Add the softened butter, eggs, sugar and lemon juice. Whip everything with an electric whisk for a few minutes, you will get a frothy and shiny mixture. Pour everything into a greased and floured pan. Bake at 180° for about an hour. Do the toothpick test, it should come out dry. And the base is done. (If you prepare the base the day before, once it has cooled, cover with cling film) in the meantime, prepare the cream for the filling. Beat the egg yolks with the sugar, add the flour and mix well. Pour the very hot milk over it and mix carefully. Now put it on the heat until it thickens. Let it cool. Add the mascarpone and limoncello. The cream is also done, now all that remains is to divide the cake in half.. remove a layer of breadcrumbs inside and set it aside.. combine the limoncello with the water to create the syrup.. moisten both bases on the side that will go inside.. fill with the cream.. assemble the cake.. now take the remaining mascarpone and spread it evenly on the cake, even on the edges.. crumble the breadcrumbs and make it stick to the edges, the mascarpone will act as glue.. cut the two lemons into slices, eliminating the ends.. distribute them over the cake as desired (I placed them overlapping them in a circle).. the Cake with mascarpone cream and limoncello is ready!!
