Procedure for the apple and mascarpone cake
Peel and cut 3 apples into cubes and one apple into thin slices. Separately, in a bowl or in a stand mixer, beat the eggs with the sugar until the mixture becomes light and frothy. Add the mascarpone and continue beating. Then add the flour, cinnamon and baking powder, mixing everything together. Add the diced apples and pour into a 24 cm mold, previously buttered and floured or lined with baking paper. Distribute the sliced apples in a radial pattern over the mixture and bake at 180° for about 40 minutes. To check if it is cooked, always do the toothpick test: every oven is different! Once the cake has cooled, sprinkle with icing sugar to taste.
