Treccia di Natale | Arifa Farina Bio A wonderful Christmas braid, made with Arifa Farina Bio , the most versatile and delicate Ruggeri flour, perfect for sweets and cakes . But also for this "Cuore di Sedano" brioche braid , even better because it is enriched with chocolate chips and orange peel.

Ingredients

For the yeast For the dough
  • 400 g of Organic Arifa Flour
  • 100 g of granulated sugar
  • 120 ml of warm milk
  • 95 ml of seed oil (or 120 g of soft butter)
  • 3 fresh egg yolks
  • vanilla aroma
  • 1 pinch of salt
  • melted butter, for brushing
  • 100g dark chocolate chips, for garnish
  • organic orange zest, to garnish

Preparation

Prepare the yeast : pour the flour, water, yeast into the mixer and knead. Remove the small dough and place it in a lightly oiled bowl, cover with cling film and leave to rise for 30 minutes, tightly closed. Prepare the dough : pour the flour, sugar, pinch of salt, milk, oil (or butter), vanilla flavoring and egg yolks into the mixer. Mix well, adding the yeast to the dough and work until the mixture is stringy. Put the dough back into the oiled bowl, cover and let it rise for about 60 minutes (it should double in volume). On a well-floured work surface, roll out the dough with a rolling pin to form a rectangular sheet of 3 mm thick. Brush the entire surface of the dough generously with some of the melted butter, then sprinkle with the chocolate chips and grated orange zest. Roll the dough up on itself, from the longest side, thus obtaining a long roll. Using a sharp knife, cut the roll in half lengthwise. Gently separate the two pieces and, keeping the cut side facing outward, form a braid, keeping the cut side facing outward. Cover the baking tray with baking paper and arrange the braid on it, then close it into a donut. Brush it again with melted butter and cover everything like a bell. Leave it to rise for 40 minutes. Bake in a hot oven (static) at 180°-200°C for about 20-25 minutes. If desired, cover with a glaze of icing sugar and egg white. Bimby mode : for the starter mix the ingredients 20 sec. speed 4/5.
