INGREDIENTS
Waffle ingredients :
220 g Ruggeri Arifa Flour
30 g Bitter cocoa
1 teaspoon 5 spice mix
1 teaspoon baking powder
50 g Brown sugar
50 g Muscovado sugar
2 N Eggs
250 ml Rice milk
50 ml Coconut oil
Ganache ingredients :
50 g Grated dark chocolate
50 g Fresh cream
5 g Butter
INSTRUCTIONS
Waffle dough preparation
- Sift the flour, cocoa and yeast, add the two sugars and the 5 spices
- We separate the egg whites from the yolks and whip them until stiff.
- In a bowl, whisk the egg yolks with the milk and oil, then add the dry ingredients little by little.
- Mix well with a whisk, once the mixture is ready, gently incorporate the egg whites from top to bottom with a spatula.
- Grease the waffle iron with oil using a brush, pour in a ladle of batter, approximately 50 g.
- We close the lid and let it cook (cooking depends a lot on the type of plate) it will take about 5/7 minutes.
- Once removed from the plate, the waffles could be joined together; separate them with scissors and cut the edges.
Ganache preparation
- Bring the fresh cream and butter to the boil.
- Remove from the heat and add the grated chocolate, stirring with a whisk until melted.
Presentation
- We serve our waffles with chocolate ganache, yogurt and fresh fruit, I used pomegranate and bananas.
KETTY'S ADVICE
If you don't have the 5 spices available, you can easily use:
Sichuan pepper, cinnamon, cloves, fennel seeds, star anise, half a teaspoon for each spice.
If you want waffles without spices you can also omit them.
