Ingredients for a 30 cm plumcake mould
  • 50 g rice flour
  • 200 gr organic Arifa flour
  • 150 g brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 40 g hazelnuts
  • 60 g dark chocolate
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon instant coffee
  • 1 teaspoon natural vanilla extract
  • 380 g very ripe bananas
  • 2 eggs
  • 80 gr Philadelphia or robiola
  • 120 g seed oil
Preparation
Turn on the oven (gas and static) to 190°. In a large bowl combine all the dry ingredients (flours, sugar, bicarbonate, yeast, salt and cinnamon with nutmeg and coffee). In a different bowl combine the wet ingredients: the bananas well mashed with the lightly beaten eggs and then the cheese and finally the oil. Add the dry ingredients to this bowl, mix very little (the more you mix the more the dough, once cooked, will be rubbery. It is the same trick that is used for the perfect success of splendid muffins!) and then pour into the plumcake mould, lined with baking paper or greased and floured. Bake for about 50 minutes (the toothpick test and knowledge of your oven are strictly valid!). There are those who suggest enjoying the slices of banana bread lightly toasted with a layer of jam ... personally I found this personal version excellent as it is! Enjoy your meal!
