Prepare the dough, dissolve the yeast with the water and 100 g of flour after 40 minutes add the remaining flour, oil and finally salt. Form a ball and let it rise for 2 hours. After this time divide the dough into balls of 60 -70 g each and let it rise again for 1 hour roll out the balls and roll them around the cannoli molds, bake coated in oil at 200 ° for 10 minutes. Once cooled remove them from the molds.
Blend the ricotta with the mozzarella, basil and oil. Cut the cherry tomatoes and season them with oil, salt and oregano. Take a pastry bag and fill the cannoli first with a few pieces of cherry tomatoes and then with the ricotta cream. Serve them both warm and cold.
