Rustic Corn Biscuits | Corn Flour Fumetto and Arifa

Ingredients for about 9-10 maritozzi:
  • 315g of organic Arifa flour (balanced mix of organic flours of soft wheat flour, durum wheat semolina, spelt flour and corn flour)
  • 170g of corn flour Fumetto
  • 200g of granulated sugar
  • 185g of softened butter
  • 65g corn starch (maizena) or rice starch
  • 85g of whole eggs (about 1 and a half eggs)
  • 50ml of cream
  • 2g of salt
  • 4g baking powder (chemical yeast)
  • 1 vanilla pod or grated lemon peel
Preparation By hand or in a mixer, mix the softened butter with the sugar. Combine the eggs, cream, salt and flavouring. Finally, add the flours and then the sifted starch and yeast. At this point, insert the dough into the cookie press or form balls and flatten them slightly with your hand. Arrange the biscuits on two or three baking trays lined with baking paper and bake at 170°C for 10-15 minutes. They can be stored for a few days in a tin box.
