Carnival Castagnole | Arifa Organic Flour

Recipe from " True Love Recipes "

Ingredients:

  • 250 g granulated sugar
  • 500 g of Arifa flour Organic Flour
  • 3 eggs
  • 1 sachet instant yeast for cakes
  • 2 sachets of vanilla
  • 300 g cow ricotta
  • seed oil for frying
  • Alchermes liqueur to decorate
  • powdered sugar

Instructions

  • First pour the flour into a fountain on the pastry board and, with the help of a fork, make a hole in the center. Around the hole, in the outline with the flour, sprinkle the sugar, vanilla, instant yeast, and in the center instead pour the ricotta and eggs.
  • Start mixing the ricotta with the eggs, then gradually add the powders.
  • When the mixture is no longer liquid, you can knead it with your hands. Knead for a few minutes and then let the dough rest for 30 minutes covered with a cloth.
  • Then divide it into 3 parts and form a sausage with each of them, which you will divide into pieces a little smaller than a walnut. Proceed in this way for all the dough.
  • Fry the pieces in plenty of hot oil, over medium heat. Be careful not to heat the oil too much, otherwise the castagnole will cook quickly on the outside and remain raw on the inside. Drain on absorbent paper.
  • Now you can decorate your castagnole with granulated sugar (when hot) or icing sugar (when cold) and sprinkle with Alchermes.
