The spiced orange spelt donut is a delicious dessert to accompany a cup of hot tea on a winter afternoon. "Cuore di Sedano" used Ruggeri Spelta Farro Flour, a versatile flour and perfect alternative to soft wheat.
Ingredients
- 200 g of Ruggeri spelt flour
- 200 g of potato starch
- 250 g of sugar
- 4 eggs
- 130 ml of seed oil
- 100 ml of milk
- the grated zest of an organic orange
- 2 tablespoons orange juice
- spice mix: cinnamon, ginger, cardamom, nutmeg, to taste
- mix of dried fruit: 15 g chopped almonds, 15 g hazelnuts, 15 g walnuts
- 1 sachet of baking powder
- butter and breadcrumbs for the mold
- icing sugar for dusting
For the decorative orange slices
- 1 organic orange
- powdered sugar
Preparation Spiced spelt donut
- Place the whole eggs in a bowl, add the sugar and, using an electric whisk or food processor, whip the mixture until it is soft and frothy.
- Sift together the flour and starch and add little by little to the egg cream, mixing delicately so as not to deflate the mixture. After incorporating 2/3 of the flours, add the milk, alternating with the remaining flour.
- Gradually add the oil and, mixing, finally, the spices, the chopped dried fruit, the grated orange peel and the 2 tablespoons of juice; finally the yeast.
- Using the Versilia oven pan, buttered and sprinkled with breadcrumbs, pour the preparation in. Tap the mixture into the mold.
- Place the flame spreader on the small burner and place the oven pan on top of the flame spreader. Cover everything with the lid. Cook on a high flame for the first 5 minutes (no more). Continue cooking by lowering the flame to minimum, without ever opening the lid of the pan . It will take 1 hour and 15 minutes, do the cooking test by inserting a piece of spaghetti through the holes in the lid, if it is dry open the lid and check the cooking. If necessary continue for another 10 minutes on a low flame, in order to have the perfect browning of the surface of the cake.
- Remove the donut from the oven pan once it has cooled or cooled. Serve on a plate sprinkled generously with powdered sugar and decorate with caramelized orange slices.
- For the baked caramelized oranges: cut an orange into thin slices, place on a baking tray covered with baking paper and sprinkle with icing sugar, place in the oven at a low temperature, turning them for perfect drying.
