Recipe of " Baci di Dama "
Ingredients: for 18-20 cupcakes
- 200g of Arifa flour ( Ruggeri )
- 50 g butter + another 50 g
- 2 eggs
- 150g organic cane sugar
- 70g of white chocolate
- a teaspoon of baking powder
- ½ vanilla pod, seeds only (I used Bourbon vanilla)
- 40g of 70% dark chocolate
- 20 g of butter
- Colored sugars
- Preheat the oven to 180°C and place paper cups in the appropriate moulds.
- In a small saucepan, heat the chopped white chocolate with the butter in a bain-marie. Let it cool.
- In a bowl (or large bowl), mix 50g of butter with the brown sugar, eggs and vanilla seeds.
- Sift the Arifa flour with a teaspoon of baking powder and add it to the other ingredients. Finally add the butter and white chocolate mixture.
- Using a piping bag or a lightly oiled spoon, fill the cupcake liners a little more than halfway.
- Bake in the oven for about 25 minutes.
- Let the cupcakes cool and prepare the chocolate for the decoration, melting some dark chocolate (40 g), previously broken into pieces, with the butter (20 g). Pour the mixture on the surface of the cupcakes (using a spoon) and finish by adding some colored sugars.
