Ricotta Gnocchi with Sauce | Arifa Organic Flour

Ingredients
  • 450 g of fresh cow's ricotta
  • 2 eggs
  • 100 g grated parmesan cheese
  • 200 g of Organic Arifa Flour
  • white pepper
  • nutmeg
  • salt
  • fresh tomato sauce
Preparation Sift the flour and ricotta and pour them into a bowl together with the eggs, grated parmesan, nutmeg, white pepper and a pinch of salt. Mix well until you get a firm, smooth dough. Dust the table with flour and place the dough on top and divide it into many small pieces from which you will obtain small sausages about 1 cm thick. Using the smooth part of a knife blade, cut each salami into small pieces and leave them to rest for 30 minutes on a tray sprinkled with flour. Meanwhile, prepare the fresh tomato sauce. When the sauce is ready, cook the gnocchi in boiling water and drain them as soon as they float to the surface. Season them with the sauce and, if desired, with grated Parmesan cheese and serve.
