Giorgia's Vegan Camilles

Recipe from " A Runner in the Kitchen "
Ingredients :
  • 150 g flour 0
  • 150 g spelt flour (for this recipe I used 300 g of Ruggeri 'Arifa' Organic Flour which contains 16% spelt flour and spelt sourdough which gives the dough an excellent flavour)
  • the grated zest of 1 lemon
  • 1 sachet of baking powder
  • 1 pinch of salt
  • 120 ml sunflower seed oil
  • 120 ml of agave syrup
  • 150 ml of carrot extract
Procedure:

In a large bowl, mix together all the dry ingredients: the flour, poppy seeds, vanilla, baking powder and coconut sugar.

In another bowl, mix together all the wet ingredients: the milk, oil, and chopped fruit.

Combine wet and dry ingredients, mixing well with a whisk or wooden spoon. If the mixture is too 'hard' to work, add a little more almond milk.

Pour the mixture into a silicone muffin mold or into individual aluminum cups. Make sure to fill them 3/4 full because they will rise during baking. With this mixture I got 8 muffins.

Bake at 180° for about 20-25 minutes (test with a toothpick to check if it's cooked).
