Blueberry Muffins with Hemp Flour

Ingredients for 8 muffins :
  • 125 gr of Ruggeri Organic Hemp Flour
  • 125 g of Organic Flour 'Arifa' Ruggeri (alternatively you can use a normal 0 flour)
  • 1 teaspoon baking powder
  • 1 tablespoon of agave syrup (alternatively you can use 100 g of sugar)
  • 2 whole eggs
  • 50 g of melted butter
  • 200ml Greek yogurt
  • 125g fresh blueberries
Procedure:

In a bowl, mix together all the dry ingredients: the two flours, the yeast and, if you don't have agave syrup, the sugar.

In another bowl, mix together all the wet ingredients: melted butter, eggs, agave syrup, and Greek yogurt.

Then combine all the dry ingredients with the wet ones, mixing well. If you see that the mixture is too dry, add a little milk.

Lastly add the blueberries and mix slowly until they are well combined with the mixture.

Take a silicone muffin mold or some aluminum muffin cups.

Fill them 3/4 full with the mixture and bake them at 180° for 20 minutes
