Pancake: the
American breakfast dessert par excellence. "FitNdelicious" offers us a new version, the tall rye pancake. It is a sort of
tall and soft pandolce , garnished with apple puree and pistachios. A
fit recipe , to be copied, with
Ruggeri Rye Flour and Rice Flour .

Procedure for tall rye pancakes
Preheat a 10 cm saucepan. Beat the egg white well until it becomes white and frothy (no need to beat until stiff). Add both flours and mix until the mixture is smooth. Add 1 tablespoon of apple puree and the raisins and continue mixing.
Pour the mixture into the pot and cook over low heat with the lid on for about 8 minutes, until the top has set. Turn the pandolce over and let it cook for a few more minutes. Once cooked, let it cool.
Decorate the top of the pandolce with the remaining puree and garnish with pistachios! And your tall rye pancake with apple and pistachios is ready!
