Blueberry, Orange and Pistachio Muffins | Arifa Organic Flour

Ingredients for 6-8 muffins (depends on the size of the paper cups...)
  • 2 eggs
  • 80 g brown sugar
  • 50 ml vegetable oil
  • the grated zest and juice of an organic orange
  • 2 scant teaspoons baking powder
  • 80 g fresh or frozen blueberries
  • 150 gr Arifa flour
For the coverage
  • a handful of blueberries
  • a handful of unsalted pistachios
  • brown sugar to taste
Preparation
Preheat the oven to 180°. Mix the eggs, oil, sugar and orange zest and juice in a bowl or mixer until you get a smooth mixture. If, as in my case, the orange is a blood orange, the muffins will be pleasantly colored...... Sift the flour with the yeast and add it to the mixture, stirring constantly. Finally add the blueberries, mixing delicately so as not to break them into the mixture. Pour the mixture into the muffin cups (I used some lightly buttered, heart-shaped silicone ones!) and sprinkle them with a few blueberries, a few pistachios and a sprinkling of brown sugar. Arrange the paper cups on a baking tray and bake in fan-assisted mode for about half an hour, without opening the oven to prevent them from collapsing. At the end of cooking, do the toothpick test to evaluate the result and if it comes out dry, they are well cooked, soft and very puffy! Fabulous warm, even with a nice spoonful of Greek yogurt, they are also delicious after a few days, stored in an airtight box.
