Ingredients
- 20 g of milk
- 10 g of brewer's yeast
- 350 Arifa Organic Flour
- 240 gr of eggs
- 60/100 g of sugar
- 1 teaspoon salt
- 170 g butter
- 1 cup of milk for brushing
- chopped pistachio and sesame seeds for decoration
Panbrioche Processing with Bimby
Place the milk and brewer’s yeast in the jug and heat 1 minute – 37° – speed 2. Add the flour, eggs, sugar and salt. Knead 10 minutes speed spike.
Once the time has elapsed, add the softened butter in small pieces a little at a time and continue kneading for another 5 minutes at spike speed, until completely absorbed.
Transfer the brioche dough to a bowl and cover with cling film or a lid. Place the bowl in a warm place until it doubles in volume (about 4/5 hours).
Line a plumcake mold with baking paper. After the rising time, take the dough and delicately, without deflating it too much, divide it into three parts. Form cylinders and make a braid.
Transfer the panbrioche braid into the mold and let it rise until doubled in size (about 2 hours). Brush the surface with milk and sprinkle with chopped pistachios and sesame seeds. Bake in a preheated oven at 180° for about 30 minutes or until golden brown.
Remove the brioche from the mold using the baking paper and leave to cool before cutting it into slices and enjoying with jam of your choice.
