Preparation

  1. We put the water in a bowl and pour the flour, let it rest for 5 minutes
  2. Using a spatula, mix the flour with the water.
  3. Once it is completely absorbed, we work the dough energetically on a lightly floured pastry board, for 10 minutes.
  4. We shape the bread (I made two loaves) and place them on a baking tray lined with oiled baking paper.
  5. Cover with cling film and place in the oven until doubled in size, approximately 2 hours.
  6. Once doubled, add the flax and chia seeds, make small cuts and bake at 220 degrees in a hot oven, with a small pan of cold water on the bottom.
  7. After 10 minutes, remove the pan and lower the temperature to 200 degrees, leave to cook for 20 minutes.
  8. Once the bread is ready, place it on a rack and leave it in the oven with the door turned off until it cools.

Presentation

  1. Our 7-grain bread is ready to be brought to the table.
