A more delicious version of the classic panettone: chocolate panettone prepared with Arifa Farina Bio, the Ruggeri flour mix particularly suitable for preparing sweet recipes .
Ingredients
- 450 g Ruggeri Organic Arifa
- 80 g sugar
- 100 g butter
- 4 egg yolks
- 60 g milk
- 130 g water
- honey
- 10 g malt (replaceable in equal weight with honey)
- 55 g Dried Sourdough with Ruggeri Yeast
- 2 tablespoons of bitter cocoa powder
- 50 g chocolate chips
- salt
- 1 vanilla pod
- a teaspoon of grated orange zest
Preparing the biga
Mix 10 g of dried Ruggeri sourdough with 50 ml of warm water, a teaspoon of sugar and 50 g of flour. Cover the preparation container and leave to mature for about 8 hours in a warm place.
Then add to this biga another 50 g of flour, 5 g of dried sourdough and another 50 ml of warm water. Mix everything together and let it rest for another 8 hours.
First dough for chocolate panettone
Add to the biga 200 g flour, 25 g dried sourdough, 50 g sugar, 50 g soft butter, 2 egg yolks, 40 g milk at room temperature. Work the dough well to obtain a homogeneous mixture that will be left to rise in a warm place until doubled (about 3 hours).
Last dough
Add to the previous dough 150 g of flour, 15 g of dried sourdough, 50 g of soft butter, 30 g of sugar, 20 g of warm milk, 10 g of salt, 10 g of honey, 10 g of malt, 2 egg yolks, the seeds of the vanilla bean, the cocoa, the grated orange peel. Work for a long time until the dough is smooth and well-strung. Add the chocolate chips, mix them into the dough and give a final kneading by hand on the pastry board. Leave to rest for about 30 minutes.
Form a ball and place it in a panettone mold.
Leave to rise as usual in a warm place until it reaches the edge of the mold (about 6 hours).
Make a cross cut on top with a razor blade, trying to cut only the surface. Put a little butter in the center of this cut.
Bake at 180° for 40 minutes, do the toothpick test once baked. Then thread with two skewers (or knitting needles) and let cool upside down.
Once cooled, glaze with white chocolate and decorate with chocolate chips for a delicious topping.
