Ingredients:
- 500 g of flour (300 g Manitoba, 200 g Arifa Ruggeri)
- 1 sachet of freeze-dried yeast
- 2 tablespoons of stevia
- 50g of melted coconut oil
- 100 cl water
- 12 cl of milk
- 1 egg + 1 yolk
- vanilla
- 50g of chocolate chips
Procedure:
As for leavened doughs, I strongly recommend using a planetary mixer or a food processor, as they must be worked very well.
Dissolve the yeast in 100 cl of warm water, then pour it into the mixer with 150 g flour and knead well until a loaf has formed. Then cover the mixer bowl with cling film and leave to rise in a warm place for at least 1 hour, or until it has doubled in volume.
Personally, I leave it to rise in the oven with only the light on.
