Ingredients for 2 small plumcakes (14 cm moulds)
- 240 g of Ruggeri stone-ground Type 1 Soft Wheat Flour
- 2 whole eggs
- 50 g egg whites
- 40 g of seed oil
- 60 g of milk of your choice
- 70 g of tomato puree
- Salt to taste
- 1 sachet of instant yeast for savory dishes
Ingredients for the filling
- 50g Greek feta
- 30 g of parmesan
- A handful of black olives
- 150 g of grilled aubergines (weight is intended as raw)
- Basil leaves
- Oregano to taste
Procedure for Mediterranean savory plumcake
Preheat the oven to 200 degrees, static mode.
Using an electric whisk, mix the egg with the egg whites, milk, oil and tomato puree.
Transfer to a bowl and add, little by little, the flour (previously sifted). Add the salt and continue with the filling ingredients: grilled aubergines cut into slices, diced feta, olives, parmesan, basil, oregano. Lastly, the instant yeast for savory dishes.
Mix the ingredients well and pour the mixture into two single-serving plumcake moulds.
Bake and lower the temperature to 180 degrees. Bake for 50 minutes, taking care to cover the surface after about 30 minutes. Once the time is up, leave the two plumcakes in the oven turned off for another 10 minutes.
Remove from the oven and let cool on a rack. Let the savory plumcake cool before removing it from the container.
