Pineapple Tatin

Ingredients: Procedure: Preheat a 14 cm saucepan. Beat the egg white well, until it becomes white and frothy, it does not need to be stiff. Add the flour and mix until the mixture is smooth, then incorporate the yogurt. Cut a slice of pineapple and place it on the bottom of the pan and let it caramelize for a minute, then pour in the mixture and cook on low heat with the lid on for about 10 minutes, until the top part has solidified.
