Cherry and Raspberry Cake | Arifa and Rice Flour

Ingredients:

  • 70 g of Ruggeri rice flour
  • 90g of oat flour
  • 5g of cocoa
  • 1 1/2 banana
  • 300 ml milk
  • 1/2 sachet yeast
  • 50 gr coconut oil
  • 100 raspberries
  • 150 cherries
Procedure: Preheat the oven to 200°. Prepare all the ingredients, cut the cherries and raspberries and set aside. Mash the banana in a small bowl and set aside. In a bowl pour all the dry ingredients: flours, cocoa, yeast and mix them. In a larger bowl mix the coconut butter, mashed banana and almond milk, until they are perfectly combined, then add the dry ingredients and mix. You will get a dense but not compact dough, at this time, add the raspberries and cherries, leaving some aside, and mix. Pour the mixture into a 24 cm springform pan, level it and decorate the top with the cherries and raspberries.
