Creamy Apple Pie | Stone Ground Soft Wheat Flour

Ingredients:
  • 4 eggs
  • 150 g of sugar
  • 100 g of butter
  • 500 ml of milk
  • 150 g of Ruggeri stone-ground soft wheat flour
  • a sachet of baking powder
  • 6 apples
  • juice and zest of a lemon
To make the creamy apple pie, you start by peeling the apples and cutting them into thin slices. Once you have done this, get a bowl or a classic planetary mixer and put the eggs and sugar inside and beat them well until you get a fluffy and frothy mixture. Melt the butter in a bain-marie or in the microwave and add it to the eggs. Then add the milk, flour, lemon zest and juice, and finally the yeast. Mix everything together, don't worry if it is liquid compared to a classic cake mix, it's fine like this. Now add the apples to the mixture obtained and pour everything into the buttered and floured cake tin. Bake in the oven at 180° for about 40 minutes, the cake will still be moist inside, so in this case you can't do the toothpick test, but just place your hand on the cake to understand if it has taken on the typical consistency of a pudding. Then we're done. You will then notice that the apples that come out on the surface will tend to brown.. your creamy apple pie is ready!!
