The rustic peach and black cherry cake is one of those moist desserts inside, that do not bind when eaten.. I used spelt flour and ricotta.. cane sugar on the surface.. enriched with black cherries and peaches cut into small pieces.. excellent warm but especially the next day.. a healthy snack that will surely please.. for this dose I used a 26 cake tin..
Ingredients:
- 2 eggs
- 200 g Ruggeri spelt flour
- 200 g sugar
- 200 g quark cheese (alternatively a classic creamy one)
- a sachet of yeast
- 3 yellow peaches
- 50 ml of milk
- 80 gr of black cherries Fruit and Berries
- 3 tablespoons of brown sugar
To prepare the Peach and Black Cherry Rustic Cake, start by whipping the eggs with the sugar... then add the cream cheese and continue whipping... then the spelt flour and yeast... in the meantime, put the black cherries in the milk so that they soften a little... peel the peaches and cut them into small pieces... put them in the mixture and also pour in the black cherries with all the milk... mix well... pour the mixture into a buttered and floured mold or lined with baking paper... distribute the brown sugar on the surface... bake at 180° for about 40 minutes... do the toothpick test to see if your Peach and Black Cherry Rustic Cake is Ready!!
