The recipe for Dina's Scarpaccia camaiorese was given to me by my friend Dina!! I'm transcribing her words just as she wrote them to me... then for dialect reasons I'll rewrite it!! In the meantime I thank her because I really ate a Scarpaccia as it should be... prepare it really because it's delicious... I'll tell you in advance that I made it for dinner and it was eaten as a snack... do your own thing!!
Ingredients:
- about ten courgettes
- 20 courgette flowers
- an onion
- salt & pepper
- 200 g of Ruggeri Organic Arifa flour
- half a glass of extra virgin olive oil
So about ten courgettes and lots of courgette flowers, let's say twenty, cut everything very finely together with a nice onion, salt and pepper and let it rest for a couple of hours, after this time since the courgettes make water, add the white flour, let's say a couple of hundred grams so that it binds, put the oil in the dough... To your taste, I have a bit of a heavy hand!!! Put a little oil in a non-stick pan, put the dough in it that is roughly the height of a knuckle, bake for 30 or 40 minutes at 200 degrees and then you'll see it when it forms a brown crust, it's ready!! About ten courgettes!!!! good, tasty and cheap!!!
To prepare Dina's Scarpaccia camaiorese, start by chopping the onion, courgettes and courgette flowers very finely... add salt and pepper and leave to rest for a couple of hours... add the flour and oil... mix well... spread out in an oiled pan (mine was 28 cm)... bake for about 30-40 minutes at 200°... you will still notice a golden crust... your Dina's Scarpaccia camaiorese is ready!!
