Peas belong to the legumes and are produced from the Pisum Sativum plant.
Peas flour is obtained from grinding of dried and dehulled pea seeds and is characterised by a typically green colour.
Ruggeri Green Peas Flour is rich in fiber and contains 23% protein (23 g of protein per 100 g of Green Peas Flour).
It is ideal for the preparation of multiple baked goods.
Green Peas Flour: A High Protein Flour
Ruggeri Green Peas Flour is perfect for the preparation of the most varied recipes of homemade bread at home, mixing it with soft wheat flour. We recommend to dose it up to 25% to make special bread. Here is our recipe for making loaves with green peas flour.
Green Peas Flour Bread Recipe
Bread Recipe Ingredients: 900 g Ruggeri Type 1 Flour - 100 g Ruggeri Green Pea Flour - 100 g Ruggeri Dried Sourdough with Yeast - 20 g Fine Salt - 30 ml Seed Oil - 600 ml Water
Procedure: pour the water into a bowl,
add the dried Mother Yeast, then all the flour and start kneading for about 5 minutes on a work surface. Add the seed oil and
finally the salt, continuing to knead until the dough is smooth and homogeneous. Place the dough back in the bowl, covered with a cloth, for about 20 minutes. Form the loaves and let them rest for 45 minutes at a temperature of about 27°C. Heat the oven to 220°C and bake for about 20 minutes.
