Homemade Apulian Bread: step by step recipe
Apulian bread is a classic of the Mediterranean diet and it pairs perfectly with the intense flavors of southern Italy cuisine: olive oil, onion, tomato, olives. And these large yellow loaves of durum wheat, rustic and tasty, are also easy to make at home. With the Ruggeri mix for Apulian Bread do by hand. Pour 340 ml of lukewarm water into a bowl. Pour the contents of the package, taking care to carefully empty the Ruggeri Tasca Magica®, a pocket which separates the yeast from the flours. Leave the water and mix to rest for at least 5 minutes. Knead vigorously by hand for 10 minutes. If the dough sticks, wash and oil your hands. Shape the loaves and leave to rise for 120-180 minutes on a previously oiled baking tray, inside the turned-off oven. Remove the tray and bring the oven to a
temperature of 200°C. Add a small pan of water into the oven with the loaves and cook for about 20-30 minutes.

To prepare Apulian bread with the bread machine you need to follow a few simple steps. The recipe is really quick because it only takes a few steps. Here is the procedure to obtain excellent Apulian durum wheat bread: the recipe is also on the package.

The ingredients of Apulian bread: durum wheat semolina, durum wheat flour and Sourdough
The original recipe for Apulian bread requires the use of re-milled durum wheat semolina and of durum wheat flour. The Ruggeri mix respects this original recipe and allows you to make a delicious Apulian bread at home, perfect to accompany soups and salads. Differently from Altamura bread, Apulian bread is a consistent and rustic bread. It is characterized by a typical yellow color, due to the caryopsis of durum wheat, which differs in this aspect from that of wheat.
The Ruggeri mix for Apulian bread also includes Ruggeri Dried Sourdough among its ingredients. Sourdough allows you to make bread while rediscovering the flavours of the past. It gives bread intense and special aromas, but also fragrance and a unique flavour, typical of the good artisan bread.
