Pater® contains the live lactic ferments and yeasts typical of the original microflora of sourdough.
It is a dehydrated mixture that encompasses all the characteristics and functionalities of pasta madre sourdough.
It provides excellent melt-in-the-mouth texture, great chewiness, and a unique aromatic profile, typical of sourdough. The result is a final product with fragrance, flavor, and freshness that last longer.
Extremely versatile, Pater® is perfect for preparing all types of baked goods: bread, Ligurian or Roman focaccias, crackers, breadsticks, and other leavened products.

How to use:
Recipes using Pater® can be accessed via the QR code on the packaging.
Pater® should be dosed at 10% of the flour weight, then add the ingredients of your preferred recipe (flour, water, salt, brewer's yeast). Dough temperature: 30°C.
The live lactic ferments and yeasts contained in Pater® have reduced leavening power, just like those in a sourdough starter. Therefore,always add brewer's yeast in the same quantity you would normally use.
Soft wheat flour 96%, dry yeast (Saccharomyces cerevisiae), dried live lactic cultures 0.01%, enzymes.
May contain soy, mustard.

Aggiunto al Pan brioche nella macchina del pane,ha reso l'impasto molto morbido, con le bolle di lievitazione,simile a un pandoro. Fantastico!
