Easter Bunny Cookies: tender spelt biscuits in the shape of a bunny, even lighter and fit because the recipe does not require the use of sugar but stevia. Ingredients
- 110 g of Ruggeri Spelt Flour
- 15 g corn starch
- 1 egg yolk
- 60g Greek yogurt
- vanilla
- 15g of stevia
Procedure for spelt biscuits
Turn the oven on to 180°. In a bowl mix the egg yolk, stevia, vanilla and yogurt with an electric whisk or by hand, until you get a smooth and white mixture. Then add the flour and starch and mix until you get a non-sticky ball.
Take a sheet of baking paper and roll out the dough thinly, then use a bunny-shaped cookie cutter to cut out the cookies. Place them on a mold with baking paper and bake for 12 minutes at 180°.
Once cooked, remove them from the oven and let them cool before dunking them in coffee!
