Recipe by " Valentina and Bimby "
Ingredients for about 6 tartlets :- 200 g of 00 flour + qb

100 g of organic Arifa flour

90 g of soft butter + qb

60 g of extra virgin olive oil

90 g of cold water

1 level teaspoon of salt

3 slices of raw ham

250 g of creamy herb cheese (Philadelphia type)

Asiago type cheese in small pieces

Parsley to taste for decoration

6 cherry tomatoes
Place the 00 flour and the Arifa flour in the jug (you can use all 00 flour if necessary).
Add the butter in small pieces, the oil, the salt, the water and work 2 min. Speed Spiga.
Remove the mixture from the bowl and divide it into 6 pieces (I kept aside a small piece from which I cut out hearts).
With the pieces of dough, form balls and place them into buttered and floured tartlet molds.
Press the dough with your hands to level it and make it adhere to the molds (I used some clever molds but the classic tart molds are also fine).
Bake in a hot oven at 180-200° for approximately 20 minutes or until lightly golden.
Remove them from the oven, let them cool well and spread the herb spreadable cheese inside the tartlets.
Decorate the surface with the Asiago pieces, with a cherry tomato cut in half and then joined in the shape of a heart, as in the photo below;
