Homemade Breadsticks: Try These Twisted Breadsticks Made with Ruggeri Flours
Ingredients for the breadstick dough
- 150 g arifa® organic Ruggeri flour
- 200 g Ruggeri Spelt Flour
- 6 g fresh brewer's yeast
- 50 ml EVO oil
- 80 ml water
- 1 teaspoon salt
- 1 teaspoon honey
- Ruggeri Durum Wheat Semolina to taste
Procedure for homemade breadsticks
Dissolve the brewer's yeast in the water. Sift the flours into the mixer, then add the previously dissolved yeast and the teaspoon of honey. Turn the mixer on at speed 1 until the dough is smooth and homogeneous. Add the salt, 30 ml of oil and knead until the oil is absorbed. Work the dough by hand on a pastry board for a few minutes, giving it a round shape. Leave it to rest for 30 minutes in a bowl covered with cling film. Spread the dough on a baking sheet and brush with the remaining oil. Cover with cling film and leave to rest in the oven turned off for 1 hour. Once the dough has risen, cut the dough with a wheel, stretch the breadsticks and twist them, breading them in the semolina to taste. Spread them on a baking sheet previously covered with baking paper. Cook for 10 minutes at 200°C in a preheated fan oven, then for 20 minutes at 180°C, until golden brown.
