Piadina Romagnola | Arifa Organic Flour

Ingredients for 4 people : Procedure:
Place the water in a saucepan on the heat, add the lard (or oil) and salt and let it dissolve. Once the lard has melted, leave it to cool slightly then pour the mixture into a large bowl with the flour . Knead everything vigorously with your hands and form a ball, which you will place in a food bag in the fridge for at least 30 minutes. At the end of this rest the dough is more compact and homogeneous, form some balls and roll them out with a rolling pin. Cook the piadinas on a hot griddle over the fire, turning them often and piercing them when they puff up; they are ready when they are golden brown on all sides. Arrange them one on top of the other on a large serving dish and fill as desired! Important note :
The first one always becomes drier during cooking, to avoid this just "dirty" the very hot pan with a piece of dough before cooking.
