Muffins with spelt flour, recipe

Spelt Flour is perfect for making a variety of sweet and savory recipes . Whether used alone or in addition to other flours, it gives a more pronounced aroma and flavor than those based on soft wheat flour. In particular, Ruggeri Spelt Flour is of the Spelt variety. Try it for these spelt and pumpkin muffins, light treats perfect to pair with a good cup of hot tea, for a delicious and guilt-free snack.

Ingredients for 4 spelt muffins

  • 70 g of Ruggeri Spelt Flour
  • 10 g pumpkin flour
  • 15 g coconut sugar (or other sweetener of your choice)
  • 60 g of apple puree
  • 1 whole egg (60 g)
  • 20 g dark chocolate chips
  • Orange aroma
  • 4 g baking powder

Procedure for preparing muffins

Mix the dry ingredients in a bowl: spelt flour, pumpkin flour, coconut sugar and dark chocolate chips (all except the yeast). Then, whisk the egg in another bowl, add the apple puree and orange flavouring; continue until you get a light and frothy consistency. Add and mix the wet mixture with the previously mixed flours. Finally, add the baking powder and quickly mix everything together, without overworking the mixture. Divide the mixture into special muffin cups (for four muffins, pour about 50 g of mixture into each cup) and bake at 180° C for about 20 minutes. Always monitor the cooking with a toothpick, each oven cooks differently. Before removing the pumpkin sweets from their respective cups, let them cool a little.
