These super soft spelt pancakes will win everyone over! Excellent for breakfast or as a snack , they are especially good when accompanied by fresh fruit and maple syrup, as in true American tradition . To prepare them, "Luciana in Cucina" used Ruggeri Spelta Farro Flour , a versatile flour with low fat content and a source of protein. To make these spelt pancakes as soft as pillows, she used an ingredient that no one expects: vinegar. In fact, thanks to the chemical reaction caused by the combination of vinegar with baking soda and yeast, you will have a truly amazing result and there will be no unpleasant aftertaste.
Ingredients
- 300 ml fresh whole milk
- 250 g Ruggeri Spelt Flour
- 50 g sugar
- 50 g butter
- 2 eggs
- 1 tablespoon white vinegar
- 1 pinch Himalayan pink salt
- 1 sachet of vanilla
Spelt pancake procedure
- Melt the butter in the microwave, then weigh all the ingredients.
- In a mixer mix flour, sugar, bicarbonate, salt and yeast, then add the eggs and melted butter.
- Pour the milk and vanilla essence. Finally the vinegar and blend all the ingredients until you get a soft batter.
- Butter a pan, pour in a ladle of mixture and cook over low heat for a couple of minutes.
- Then turn and continue cooking for a minute or two. The pancakes should be golden brown.
- Serve with fresh fruit and drizzle with maple syrup.
