Zucchini and paprika pancake is a quick and easy recipe from
Fitndelicious for a light lunch with excellent nutritional values thanks to the
Buckwheat Flour .

Procedure:
Cut the courgettes into cubes and steam them.
Preheat a 14cm saucepan.
Beat the egg and the egg white, add the salt and then the flour with the paprika, mix until you get a smooth mixture. Add the courgettes and mix.
Pour into the pot and cook on low heat, covered for 8/10 minutes, turn and cook for another 2/3 minutes. Once cooked, set aside and let cool or eat immediately.
